Hello, hello!

How’s your Wednesday going? I love Wednesdays for this very reason—-

What I Ate Wednesday– Thanks Jenn from Peas and Crayons for hosting!  I can’t get enough stalking what other people eat.

I started mine with a lopsided looking oatmeal pancake and the usual black coffee

IMG_1225Those are blueberries…….. that all migrated to one side of the pancake?!  I made this with 1/2 cup old fashioned oats, 2 egg whites, 1/4 tsp baking soda, pinch salt and cinnamon and 1/2 cup frozen blueberries.  I topped with with strawberry preserves instead of the usual almond butter since I was out!

After an intense spin class I had a snack of two clementines.  Love these little guys.

Lunch was super random today.  I almost always try to make enough dinner for leftovers the next day, it didn’t happen last night.  The pesto whole wheat gnocchi and roasted broccoli didn’t stand a chance.

And I was out of greens for my usual salad for lunch (if no leftovers),

So a curried tuna sandwich on whole wheat with pickles and a handful of roasted black eyed peas was what I came up with.

After an appointment and a run to pick up some spinach, kale, freshly ground almond butter (!!)and mint tea I had a snack of

duh! and a small cup of greek yogurt, fiber cereal, almond butter and a few chia seeds/cinnamon/honey. Ohhh yeahhhhh

IMG_1232Tonight I made a quick stir fry of green peppers/onions, brown rice/quinoa, and homemade refried beans.

I served mine over a bed of spinach and loaded with red pepper flakes to make up for the serious lack of green I had throughout the day. 🙂

Yesterday my hubby came home bragging that the new intern from Germany came bearing gifts of dark chocolate.  So naturally I made him sneak one out of the office for me today.  Muhaha!

Ummmm WORTH IT!

Plus more mint tea.  My obsession! The perfect dinner cap.

Today was not the best for veggies, so tomorrow I will devour as many veggies as possibly I can.

I think I’ll start with an overnight oats soaked in a green monster, like this one I had the other day.

I’m already excited.  (1 banana, 1 cup almond milk, couple handfuls of spinach all blended together and soaked with 1/2 cup oats overnight.  top with almond butter!)

Eat healthy fat for breakfast? Don’t mind if I do!

    I haven’t tried the peppermint tea but I am obsessed with the Candy Cane Lane flavor! Wondering if the peppermint is pretty similar?!

    I’m actually drinking a mug of mint tea as I type this! I saw that peppermint tea at the store and really wanted to get it….exceptttt I already had like 2 kinds at home haha.

    Does the hubby eat a lot of the same stuff as you? I loved everything you posted in this entry but kept thinking “Tristan would neeeever eat that”. The gnocchi and chocolate I know he could get down with though 😛

      Yay for mint tea! And yes, he eats everything I make us. He doesn’t really have a choice- muahaha! As long a I make a meal with meat in it twice a week, he doesn’t complain. And sometimes the way I serve it will be different- like dinner last night I didn’t give him greens, just more beans!

    Your meals always look so good! Whenever I make an oatmeal pancake, mine looks just like yours does. Lopsided and uneven, but still delicious. I’m intrigued by your green monster oatmeal. I’ve never combined the two before!

      Thanks! Just because it looks bad doesn’t mean it tastes bad, right? Yes, try soaking oats in a green monster it’s awesome!

    All this food looks AMAZING especially that lunch with the broccoli. YUMO. I need to make pancakes with oats!

    I loveee pancakes for breakfast, or oatcakes, major yum especially when topped with nut butter 😉 And oh my goodness, that dinner looks delic, no wonder you didn’t have any leftovers!
