Winter Superfood Fruit Salad


I had the most delicious salad yesterday afternoon.

Trust me, you want this recipe!


Filled with in-season fruits and packed with superfoods.  PACKED!

The protein packed quinoa and walnuts will provide satiety in this light salad.  The creamy goat cheese is phenomenal.  I snagged some wild blueberry and vanilla goat cheese from the market the other day, but plain goat cheese would work just as well.

Winter Superfood Fruit Salad with Honey Lemon Vinaigrette 

Couple big handfuls of mixed salad greens*

1/2 grapefruit, chopped*

1/2 pomegranate, seeded*

1/2 cup cooked quinoa*

2-4 T toasted walnuts*

1/4-1/3 cup wild blueberry and vanilla goat cheese

Honey Lemon Vinaigrette 

1 clove garlic, minced*

1 tsp honey

1 T olive oil*

1 tsp lemon juice

salt and pepper

Combine all ingredients together to form salad.  Mix dressing together separately and top over salad.

    Wow, wild blueberry and vanilla goat cheese!? Sounds incredible! I know a lot of people who don’t like fruit on salads, but I love it.

    Yes! The amazing walnut + pomegranate combo 🙂 I like the addition of grapefruit and lemon in the dressing…I forget about citrus at this time of year!
