How’s the middle of your week going?

Mine started with my most favorite bowl of oatmeal ever, whipped banana oats with peanut butter and granola.

9:30 am


Today’s mix had 1/2 cup oats, 1/2 cup almond milk, 1/2 cup water, 1 T chia seeds, half a banana, pinch of salt.  Cooked on medium high heat and then whipped like crazy until the consistency is awesome.  I find that the chia seeds make it a lot more….fluffier. Yes, we’re going to roll with “fluffier”.  And with coffee. Always black!

After some laundry and cleaning I made lunch:

Broccoli and tuna ww bow-tie pasta.  I made a sauce with 2 laughing cow swiss cheese.  Was super delicious!

While I was making lunch, I prepped my buffalo chicken chili to simmer in the crock pot for the afternoon…..

7:00 pm

IMG_0820Loved it!  I soaked up the juices with some olive oil bread I picked up from the store yesterday.  YES.  I ate this with a glass of wine and then finished it off with some granola I made the other day.

No other snacks today, but I had seconds of both the pasta and the chili. 😉 And lottssss of water.  Lots.  I ate every single fruit and veggie that we had in the house, which is clearly not  whole lot as of right now!  We are trying to save some mula for an upcoming trip and x-mas gifts for the month.

I decided to take today off from working out (my body just feels super worn down and sore….taking it as a sign to give myself 2 days of rest this week instead of the usual 1).

I have all of my gifts purchased  for Christmas and finished wrapping them today……this has never, ever happened this early before!  WHO AM I?


Like our itty bitty tree? hehe.

Do you ever change your exercise plans and give yourself a day off if you feel like you need it?

Are you done with your Christmas gifts?  I will never neglect Cyber Monday again!

    Ohh that bow tie pasta, and that chili..YUM!! WOWOWOWOW you are done shopping!? YOu are good!! I am maybe like..half done? HA!

      I’m done shopping! I owe all of it cyber monday….the deals were crazy awesome!! Trust me this has never happened before!

    I give myself the day off more often than I should 😉 But I usually make up for it by skipping dessert or my usual evening glass of wine/beer!

    Those oats sound soooo good. I usually make my oats in the microwave at work, haha, but I want to try whipping them soon!

      hahah well yesterday I took off from the gym and still had my IPA last night…. whoops! Whipped oats are seriously the best!

    Yikes, I am definitely not done with Christmas gifts yet! Your itty bitty tree is adorable 🙂 And I agree about the chia seeds in oats. I can’t eat oatmeal WITHOUT chia in it anymore!

    I change my fitness plans almost weekly! I set a goal for myself but always end up moving around my rest days depending on how sore my muscles are. Love that your presents are stacking halfway up your tree – too cute!

      I agree- mine plan usually changes depending on my super sore muscles!
